The dish and where it comes from

On a food trip to Ayutthaya you can meet boat noodles, grilled river prawns and roti sai mai together. A plan of noodles for lunch and roti sai mai as a snack would be a good one. Even so, boat noodles are not something you can eat only in Ayutthaya.

How to order and eat it

  1. Choose the noodles and meat you want and order. If you avoid meat, offal or particular seasonings, ask about what goes into the broth as well.
  2. Look at the bowl size and decide how many bowls to have. Not every shop serves the same size.
  3. Taste the broth first, then add extra seasoning a little at a time. You do not need to put a lot of chilli in from the start.

Frequently asked questions

Can I only eat them in Ayutthaya?

No. They are eaten in other cities too. In Ayutthaya you could pick them as a meal during a break from sightseeing the ruins.

Are the ingredients in the broth always the same?

No. Meat, offal, seasonings and broth differ from menu to menu. If there is something you avoid, rather than asking them to leave out the meat, ask whether the broth uses it too.
