How to order and eat it

  1. Choose the noodles and meat you want, and order. If you avoid meat, offal or a particular seasoning, ask about the ingredients in the broth too.
  2. Look at the bowl size and decide how many bowls to eat. Not every shop serves the same size.
  3. Taste the broth first, then add extra seasoning a little at a time. You do not need to add a lot of chilli from the start.

Frequently asked questions

Can I eat it only in Ayutthaya?

No. It is a dish eaten in other cities too. In Ayutthaya you could choose it as a meal between visits to the ruins.

Are the ingredients in the broth all the same?

No. The meat, offal, seasonings and broth differ by menu item. If there is an ingredient you avoid, ask whether it is also used in the broth rather than only asking to leave out the meat.
